No, it won't really hold much water weight. It gets wet on the surface, but is totally dry after a few hours as long as you don't leave it crammed in a bag. I haven't noticed any change in weight after a session on my corked shortboard, and if anything the grip is just getting better the more I use it, like a finely aged wine.
I'll do a pre and post sesh weight to make everyone feel better, but it'll probably be dry by the time I get home. Keep in mind, there's only a thin layer of cork (less than 1/8"), so even if it was super absorby (which it's not), it couldn't physically hold much water.
I'd be more worried about water absorption with a softwood layer under the glass. Then when you get a ding it'll suck water throughout the board and delam in funny places. My cork is on top of a completely sealed board, so any water added will evaporate back into thin air. No worries.
